Breakfast Muffins

What do you do with leftover bread, bacon and sausage?  Make breakfast muffins of course!!!  This weekend we made spaghetti and I had about half a loaf of some delicious bread, then from last night’s oh so romantic breakfast for dinner I had sausage and bacon.

Recipe:

3 c. bread, cubed

1 c. sausage and bacon (mixed not each)

6 eggs

2 c. Monterey cheese, shredded

1 1/2 c. milk

2/3 c. spinach

2 tsp. seasoning salt (I use one I make myself)

Preheat oven to 350F.  Mix all ingredients in a bowl, then fill lined muffin tins.  Bake for 20 -25 minutes.  This batch made 12 nice sized muffins.  You could definitely do mini muffins just adjust cooking time.  Also, you could add different ingredients to suit your family’s tastes.
